WINEMAKING
The selected grapes, harvested by hand in small crates at the end of September, are destemmed and cold macerated for 12-18 hours. This is followed by gentle pressing at low temperature. After the must has settled and fermentation has taken place in stainless steel, the wine rests on its fine lees for 8-12 months with weekly bâtonnage. Ageing then continues in the bottle on its own yeasts for at least 36 months. This is followed by dégorgement and a further stabilization phase in stacks for 5-6 months.
COLOR
Bright yellow colour tending towards golden.
SENSORY EVALUATION
On the nose, mineral and exotic fruit notes are followed by floral, citrus and sweet spice sensations. The palate is full and dry, well supported by sapidity and freshness.
